Tangy, racy, dry.
After many years of renovations, Cedar Creek has had a much needed transformation to their winery and hospitality center. Simultaneously the vineyards and winemaking are in the final stages of their five year transition to organic.
This 100% Pinot Noir sparkling comes from the Jagged Rock Vineyard on the black Sage Bench. It was fermented for four months on lees in stainless tanks then moved to clay vessels to age on skins for 157 days.
It's a pale onionskin shade and suggests sweet notes of orange blossoms and peaches, tangy red berries and apple skins. A dry fizzy wine, it is juicy with crunchy tree fruits and tart red berry flavours to echo the nose. The acidity is on point; the finish is racy and zesty.
